Thai Peanut Sauce

This recipe makes about 1 cup of Thai peanut sauce. I serve it over chicken, stir fried veggies and ramen-type noodles. I sauté chicken pieces and veggies in peanut oil, serve them over the noodles and drizzle the peanut sauce over the top. Yum.

1/2
cup chunky peanut butter
1/4 cup minced onion
1 small garlic clove, pressed
1/3 cup water
1 tablespoon fresh lemon juice
1 tablespoon honey
2 tablespoons soy sauce
1 teaspoon vegetable oil

Mix in blender, heat and serve.
